[RECIPE IN THIS DESCRIPTION] Strawberry Shortcake In A Mug.

This little cake is a real high fat treat. It does have a slight egg taste to it but I would say itโ€™s more like egg custard than anything! I would suggest this 2 minute cake for anyone who struggles to get their fat levels up!

| The Recipe |

INGREDIENTS:
– 3 tbsp Cream Cheese, room temperature
– 1 tbsp Coconut Flour
– 2 tsp Sweetener (I used Erythritol)
– 1/4 tsp Vanilla Extract
– 1/4 tsp Baking Powder
– 1 Large Egg
– 2 Large Strawberries, sliced
– 4 tbsp Whipped Cream

METHOD:
1. In a small bowl, add the egg and beat lightly. Then add the cream cheese and vanilla extract, beat until well combined.
2. Add the coconut flour, baking powder and sweetener. Mix well and allow to sit for one minute.
3. Transfer to a large mug and place in the microwave, on high, for 1 minute (or until fully cooked).
4. Remove the cooked cake from the mug and cut in half. Add 1/2 the whipped cream to the bottom half of the cake, then add 1/2 of the strawberry slices. Top with the other half of the cake, add the remaining whipped cream and place the strawberry slices. Enjoy!
