[RECIPE BELOW] Panna Cotta.

We start this year’s Christmas recipes with a traditional Italian recipe. Panna cotta translates to “cooked cream” and that’s exactly what it is! This creamy goodness is really simple – it will take minutes to prepare and a few hours (if that) to solidify. Not only that but it’s got fantastically high fat macros – making it an ideal dessert for yourself and guests alike!

| The Recipe |

INGREDIENTS:
– 2 tsp Gelatin
– 1/3 cup (80ml) Cold Water
– 8.8oz (250g) Mascarpone Cheese
– 1/2 cup (120ml) Unsweetened Almond Milk
– 1/4 cup Sweetener (I used Erythritol)
– 1 tsp Vanilla Extract
OPTIONAL: Keto Friendly Jam/Jelly

METHOD:
1. Mix the gelatin and water together in a small bowl until the gelatin has dissolved. Set aside for 5-10 minutes to “bloom”.
2. In a small saucepan, over medium heat, combine the mascarpone, vanilla extract, almond milk and sweetener. Cook until hot but not simmering or boiling.
3. Remove from the heat and add the bloomed gelatin. Mix until completely combined.
4. Pour into 4 medium glasses (make sure these glasses can handle hot liquid!) and place in the fridge for 1-2 hours or until set.
5.Optional: Top with keto jam/jelly! (I used SkinnyFoodCo’s Blackcurrant Jam)
