[RECIPE BELOW] Festive Rice.

This cauliflower rice takes some of the known components of Christmas food and puts them in a recipe together. You can serve this as a side dish OR you can use this recipe for leftovers on the 26th/27th – much like Brits have the high carb “bubble and squeak” with remaining Christmas food for a few days after the fact! If cashews are a little bit too high carb for you – feel free to replace them with another nut or just omit them completely.

INGREDIENTS:
– 2 tbsp Oil (Coconut, Olive or Avocado)
– 500g (17.6oz) Cauliflower Rice
– 1 Medium Onion, finely chopped
– 1 tsp Mixed Spice
– 75g (2.6oz) Pecans, chopped
– 75g (2.6oz) Cashews, chopped
– 75g (2.6oz) Fresh Cranberries, chopped
– 2 tbsp Flat Leaf Parsley, chopped

METHOD:
1. In a medium frying pan, over low-medium heat, add the oil & onion, fry until translucent and soft.
2. Add the cauliflower rice and mixed spice. Mix and cook for 5-10 minutes or until at desired softness, stirring occasionally.
3. Mix in the pecans, cashews, cranberries. Then top with the parsley.
4. Serve and enjoy.
