[RECIPE IN THIS DESCRIPTION] Quick Tandoori Chicken.

Whilst not actually made in a tandoor, this recipe is a quick alternative – as the marination can be used immediately – it is also incredibly flavoursome and the chicken is so juicy it practically falls off the bone. Whilst this recipe makes it in the oven, it would also be ideal as a summer recipe that’s cooked on the barbecue… or made in a tadoor!

| The Recipe |

INGREDIENTS:
– 80ml (2.8 fl oz) Coconut Oil, melted
– 250g (8.8oz) Greek Yogurt
– 2 Garlic Cloves, minced
– 1 inch Ginger, peeled & minced
– 1 tsp Turmeric
– 1 tsp Chili Powder
– 1 tbsp Ground Cumin
– 2 tbsp Garam Masala
– 3 tbsp Paprika
– 1.5 tsp Salt
– 5 tsp Lemon Juice
– 8 Chicken Thighs, skin-on

METHOD:
1. Preheat oven to 220c/425f. Line a large baking sheet with foil.
2. Start by lightly slicing the skin of all chicken thighs a few times – to help the marinade coat the chicken better. Set aside.
3. In a large bowl add ALL ingredients except the chicken and mix well. Then, add the chicken and use your hands to massage the marinade all over the chicken thighs – making sure they are all well coated in the marinade.
4. Transfer the coated chicken thighs to your prepared baking sheet, making sure they don’t overlap.
5. Bake for 20-25 minutes, or until the chicken has reached an internal temperature of 74c/165f, and is beginning to char at the edges. Enjoy!
