[RECIPE IN THIS DESCRIPTION] Almond Cloud Cake.

I’ve called this incredibly low calorie dessert a cloud cake but it is very much like a soft meringue – where the edges are crunchy and crack with a minor touch but the middle is soft and melts in your mouth (like a cloud would!)
It’s got a lovely touch of almond in every bite and is strong in sweetness.

INGREDIENTS:
– 3 Egg Whites
– 1/4 tsp Cream Of Tartar
– 1/4 cup Sweetener (I used Erythritol)
– 1 tsp Almond Extract
– OPTIONAL: Flaked Almonds & Rose Petals, for decoration

METHOD:
1. Preheat oven to 160c/320f. Prepare a circular baking pan with parchment paper.
2. In a large clean and dry bowl, add the egg whites. Then add cream of tartar, sweetener and almond extract. Using an electric whisk, whip the egg whites until you have stiff peaks.
3. Using a spatula, gently place the whipped mixture into the middle of your prepared pan. Use the spatula to gently form the egg whites into a dome. Top the dome with optional ingredients.
4. Bake for 20-22 minutes, or until the outside of the dome is lightly browned and hard when tapped. Carefully cut into 4 and enjoy!
