These 5 ingredient chocolate coated peanut balls are quite similar to Reece’s Peanut Butter Eggs BUT with added crunch (from the protein bars) and ketogenic macros! Whilst really delicious as a quick sweet snack, they’re also great as a dessert OR as a homemade gift for a peanut butter/chocolate combo lover!

INGREDIENTS:
– 1 cup (250g) Peanut Butter (ALWAYS CHECK CARBS BEFORE BUYING)
– 1/4 cup (32g) Coconut Flour
– 1/4 cup Powdered Sweetener (I used Erythritol)
– 3.1oz (90g) Protein Bars, of your choice – I used Adonis Peanut Butter & Cocoa Bars (https://www.ketonis.com/)
– 3.5oz (100g) Dark Chocolate (70% or higher) – I used 85% Lindt.

METHOD:
1. Prepare a large baking sheet with parchment paper.
2. In a medium bowl, add peanut butter, coconut flour, and sweetener. Mix until you have a uniform dough.
3. Roughly chop your protein bars into small pieces. Add to the peanut butter mixture and fold to combine well.
4. Split your dough into 15 pieces and roll each into balls. Place in the fridge for 30 minutes.
5. Meanwhile, add the chocolate to a microwave safe bowl and microwave, on high, for 1 minute. Remove and stir. Place back in the microwave and repeat until it has fully melted.
6. Dip your chilled peanut butter balls into the chocolate – make sure you coat them and let them drip briefly! Then place them on the prepared baking sheet. Chill in the fridge for at least 30 minutes. Enjoy!
