Celeriac & Leek Gratin || 🎄 12 Days of Keto Christmas 🎄


[RECIPE IN THIS DESCRIPTION] Celeriac & Leek Gratin.

Celeriac acts like a great potato alternative; going lovely and tender but keeping its shape after being baked. I love that celeriac has a slightly nutty taste, making this recipe like a really creamy, herbed, walnut-esque gratin. It’s absolutely delicious and will definitely be added to our Christmas menu – just be careful because celeriac AND leek both make people gassy, eat it in moderation!

| The Recipe |

INGREDIENTS:
– 28g (1oz) Salted Butter
– 2 medium Leeks, sliced into rings
– 2 tsp Dried Rosemary
– 1 Bay Leaf
– 450ml (15.8 fl oz) Cream
– 150ml (5.2 fl oz) Unsweetened Almond Milk
– 1 Large Celeriac (approx 500g / 17.5 oz), peeled, quartered and thinly sliced
– 113g (1 cup) Cheddar Cheese, grated
– Salt & Pepper, a sprinkle

METHOD:
1. In a medium saucepan, over low-medium heat. Add the butter, leeks, rosemary and bay leaf. Cover and cook very gently for 15-20 mins until the leeks are soft.
2. Pour over the almond milk and 400ml (14oz) of cream, stir and bring to a simmer. Simmer for 10 minutes, then remove from the heat and leave to cool for 10 minutes – make sure you scoop out the bay leaf!
3. Give it a stir and then pour enough of the leek mixture into a medium ovenproof dish to cover the base. Then arrange a layer of celeriac in the dish, add a sprinkle of salt & pepper, then scatter with a thin layer of cheese. Repeat the process, alternating between layers of the leek mixture, celeriac slices, and cheese – finishing with a drizzle of the rest of the cream.
4. Preheat the oven to 180c/375f.
5. Bake the gratin for 1 hr to 1hr15 mins, until the top is golden and the celeriac is tender when poked with a knife. If the gratin is browning a little too much, cover the dish in foil and continue to cook until ready.
Cut into 8 and serve.
