Tomato Cauliflower Bake || The Keto Kitchen UK


[RECIPE IN THIS DESCRIPTION] Tomato Cauliflower Bake.

Whilst slightly higher on the carbohydrates than my typical dinner/sides recipes, this cauliflower bake is incredibly flavoursome – having a taste that is rich with a slightly sweet taste from the tomato, as well as a strong basil flavour. It’s especially delicious with a side of sausages!

| The Recipe |

INGREDIENTS:
– 1 large Cauliflower, cut into florets
– 1/4 cup (35g) Sun-dried Tomatoes, diced
– 14oz (400g) Tinned Chopped Tomatoes (ALWAYS CHECK CARBS BEFORE BUYING)
– 2 tbsp Tomato Paste
– 2 Garlic Cloves, minced
– 2 tsp Dried Basil
– 2 tsp Dried Oregano
– 1 tsp Salt
– Β½ tsp Black Pepper
– 1 cup (113g) Cheese, shredded

METHOD:
1. Preheat oven to 190c/375f.
2. In a large microwave safe bowl, add the cauliflower florets and 2 tbsp water. Microwave on high for 8-12 minutes, or until just fork tender. Drain the water.
(You can also cook your cauliflower in a pot of boiling water over a medium heat)
3. To that large bowl with cauliflower, add all ingredients EXCEPT the cheese and mix to combine.
4. Place the cauliflower mixture in a large baking dish, top with the cheese and bake for 15-20 minutes or until the cheese has melted and begun to brown. Serve and enjoy!
