I’ve noticed everyone has a slightly different bolognese recipe they swear by… Well, this is mine!
This is the only recipe I’ve eaten at home since I can remember.

| The Recipe |

MAIN INGREDIENTS:
– OPTIONAL: 225g Low Carb Spaghetti (56g/2oz per person)
– 1 medium White Onion
– 1 tbsp Butter
– 1 tbsp Oil (Olive or Avocado)
– 90g (3.1oz) Bacon, diced
– 750g (1.6lbs) Ground Beef
– 115g (4oz) Mushrooms, chopped
– 150ml (5.2 fl oz) Water
– 2 tbsp Dry White Wine
– 2 tsp Sweetener – I am using Erythritol
– 1 tsp Fresh Basil
– 1 Bay Leaf
– Salt & Pepper, to taste

MARINARA SAUCE:
– 1 cup (150g) Tomatoes, chopped
– 1 cup (30g) Fresh Basil
– 2 cloves Garlic, minced
– 1 small White Onion, diced
– 1/4 cup (60g) Tomato Purée
– 1/4 cup (60ml) Olive Oil
– 1/4 tsp Salt

METHOD:
1. Start by making the marinara sauce, by adding all marinara ingredients to a food processor and blending until smooth.
2. In a large pan (with a lid), over medium heat, add the oil and butter. Allow the butter to melt.
3. Add onion and bacon lardons. Fry until the bacon is cooked and the onions are golden/translucent.
4. Add the ground beef and continue to frying for 3-4 minutes, breaking the beef up and stirring constantly.
5. Stir in chopped mushrooms, water, wine, marinara, basil, sweetener, salt & pepper and bay leaf. Then slowly bring to the simmer, stirring often.
6. Cover pan and put the heat on low, simmer the bolognese gently for 30 minutes, then uncover.
7. Continue to cook uncovered for 20-30 minutes (or until half the liquid has evaporated). Stir occasionally.
8. Prepare your pasta alternative just before you serve and enjoy!
