This dinner is very simple looking but full of texture and flavour – the outside of the fathead dough is crispy, but the inside is doughy and soft. This texture alongside the slightly crunchy, soft tomato and basil gives you a tasty dinner OR side dish!

| The Recipe |

INGREDIENTS:
– 1 & 1/2 cups (168g) Mozzarella Cheese, shredded
– 2 tbsp Butter
– 2 tbsp Cream Cheese
– 1 Large Egg
– 1/4 cup (32g) Coconut Flour
– 1 Large Tomato, cut into 9 slices
– Fresh Basil, chopped (approx 1 tbsp)
– 1/2 cup (50g) Parmesan, shredded
– Salt & Pepper, to taste
– 1 Egg Yolk, beaten


METHOD:
1. Preheat oven to 180c/350f. Prepare a large baking sheet with parchment paper.
2. In a large microwave safe bowl, add the mozzarella, cream cheese and butter. Place in the microwave on high for one minute increments, stirring in between, until fully melted.
3. Add the egg and beat until it is partially combined. Then add the coconut flour. Mix until you have an even, uniform dough.
4. Place the dough between two pieces of parchment paper and roll into a rectangle approx 1/4” thick. Cut the dough into 9 squares.
5. On each square place a tomato slice diagonally, sprinkle with basil, parmesan and salt & pepper. Then fold the opposite corners of each square and press them together, to create little boat-like shapes.
6. Place the puffs on your prepared baking sheet and brush each with egg yolk.
7. Bake for 18-20 minutes, or until the parmesan has melted and the puffs are beginning to brown. Enjoy!
