[RECIPE IN THIS DESCRIPTION] Shakshouka.

This traditional African breakfast adds a little bit of spice to your day without too much hassle. Whilst this recipe may seem very simple, it is incredibly delicious and something a little bit different – itโ€™s especially delicious served with some sausages. I think it is well worth the carbs!

| The Recipe |

INGREDIENTS:
– 2 tbsp Oil (Coconut, Avocado or Olive)
– 1 large Onion, diced
– 1/2 tsp Red Chili Flakes (1/4 tsp if youโ€™re not good with hot food!)
– 1 Garlic Clove, minced
– 10-12g (0.4oz) Coriander/Cilantro Stalks, finely diced
– 400g (14oz) Canned Chopped Tomatoes (ALWAYS CHECK CARBS BEFORE BUYING)
– 1 tsp Sweetener (I used Erythritol)
– 4 Eggs


METHOD:
1. In a large frying pan (with a lid), over low-medium heat, add the oil, onion, chilli, garlic and coriander stalks. Cook until soft (approx 5 minutes), stirring occasionally.
2. Once soft, add the canned tomatoes and sweetener. Mix well then simmer for 8-10 minutes, or until thick.
3. With the back of a large spoon, create 4 dips in the sauce (all the way to the bottom of the pan). Crack an egg into each dip.
4. Cover the frying pan with the lid, change the temperature to low, then cook for 6-8 minutes or until the eggs are done to your liking. Garnish with diced coriander/cilantro leaves and enjoy!
