Masala
1 Tbsp Oil
½ Tsp Fennel Seeds
½ Tsp Cumin
1 Tsp Whole Pepper
1 Bay Leaf
4 Clove
3 Green Cardamom
1 Black Cardamom
1 Cinnamon Stick
10 Dried Red Chillies
1 Tbsp Coriander Seeds
1 Star Anise
½ Tsp Poppy Seeds
2 tsp Kalpasi – DagadPhool
10-15no Curry Leaves
1 Cup/100gms Grated Coconut
10g/1Tbsp Cashews
Cooking
1 Tbsp Oil
4no green Cardamom
3no Cloves
1 Bay Leaf
1 Star Anise
1no black Cardamom
½ Tsp Fennel
½ Tsp Cumin
100g Shallots
3no dry whole red chillies
10 no Curry Leaves
50g Sliced Onion
1no Tomato
1 tsp Ginger Garlic Paste
1 tsp Red Chilli Powder
1 ½ tsp Coriander Powder
½ tsp Turmeric
1 tsp salt
1kg chicken
All the Chettinad Paste
