Ever since I was young I was fascinated with turkey meat. Must have been all the movies and TV shows that made it seem like a larger than life dish to have at your celebrations. For years I was unable to find a bird that lived up to what I imagined it tasted like in my head.

Fast forward to 2021 and I managed to get my hands on a Butterball turkey and cook it to absolute perfection. The key was to butcher the bird and break it down. Living in an apartment in Mumbai even with a 52 liter oven and a smaller Turkey weighing about 5kgs it’s impossible to roast the whole bird and get the dark meat and white meat both cooked perfectly at the same time. And when you pay for a premium meat product you don’t want to take any chances.

Which is why I urge you to not just buy a Turkey but butcher the bird and break it down for an easier and more accurate cook. You can also just purchase Turkey legs or Turkey breast.
