Were you a bounty bar lover or bounty bar hater?
These ball versions are a great little fatty boost to have during the holidays – mimicking the iconic chocolate coconut bar without being overly sweet.

| The Recipe |

INGREDIENTS:
– ยฝ cup (105g) Coconut Oil, melted
– 2.3 fl oz (70ml) Cream
– 2 cups (200g) Unsweetened Shredded Coconut
– 1 tsp Vanilla Extract
– 2 tbsp Sweetener (I used Erythritol)
– 5.2oz (150g) Dark Chocolate (70% or higher – I used 85% Green & Blacks)

METHOD:
1. In a large bowl, add the melted coconut oil, cream and vanilla extract. Mix until well combined.
2. Add the shredded coconut and powdered sweetener. Mix until well combined.
3. Place the mixture in the fridge for at least 30 minutes to firm up.
4. Use a tablespoon to scoop a piece of the chilled coconut, then mould it, with your hands, to make a ball – make sure you compress them really tightly so they keep their shape when dipped in chocolate.
5. Place the balls in a container and freeze for 20 minutes.
6. Before you remove the balls from the freezer, place a medium saucepan, ยฝ full of water, over a low-medium heat. Bring to a simmer then place a large glass or metal bowl on top of the saucepan. Add the chocolate and allow to melt, stirring occasionally – make sure no water gets in the bowl of chocolate.
7. Once the chocolate has melted, turn off the heat. Use a fork or chopsticks to lower the frozen balls into the melted chocolate, allow excess chocolate to drip off before placing them on a baking sheet and popping them in the fridge to solidify.

Keep them in the fridge when not consuming BUT they are best eaten at room temperature, so get them out 10 minutes before consuming!
