[RECIPE IN THIS DESCRIPTION] 10 Minute Ginger Biscuits.

It’s a bit strange to have nut butter in a recipe like this (peanut butter in my case) but it’s essential as it helps with the binding of the ingredients without using a fraction of an egg. Whilst a little bit crumbly and having that typical coconut flour grit to them, they are a nice, oat-y sort of texture. The aftertaste has a real peppery ginger kick and the coconut is tastable. These are ideal for a real quick treat that can be prepared and cooked within 10-15 minutes.

| The Recipe |

INGREDIENTS:
– 6 tbsp Coconut Flour
– 5 tbsp Coconut Oil, melted
– 1.5 tbsp Sweetener – I used Erythritol
– 2 tbsp Nut Butter (ALWAYS CHECK CARBS BEFORE BUYING)
– 2 tbsp Ground Ginger

METHOD:
1. Preheat oven to 180c/350f. Line a large baking sheet with parchment paper.
2. In a medium bowl, add ALL ingredients. Mix until you have a uniform dough. Allow to sit for 5 minutes.
3. Scoop 1 teaspoon of dough and place the ball on your prepared baking sheet and flattening with the back of a spoon. Repeat with all of the dough, leaving medium gaps between cookies – they will spread.
4. Bake for 5-10 minutes, or until they’ve turned golden.
5. Remove from the oven and leave to cool COMPLETELY before enjoying!
